When you must contend with some of the harshest weather in North America, it’s nice to come home to warm hearty meal.

For the rest of us, soup is a great option to have as a back-up or the main meal on our “cold” days and nights in winter, or just as an easy to prepare meal after a long tiring commute to your home after work. Soup is soothing, simple and comes in some many flavours it’s hard to wear out a good bowl of soup!

For this recipe from the Prince Edward Island (PEI)Potato people will give you another soup hit your family and friends will want added to the charts. It is easy to prepare, will serve six and can easily be frozen and reserved with a quick microwave and bun with crackers, or not? Your choice.

This is possibly the best comfort food go-to next to chicken noodle soup, which as we know has the powers to solve most colds, wars and world problems. Chicken Noodle soup, or this chowder should be made mandatory at the UN before all negotiations. This could be the key to the future, sitting down breaking bread, sharing soup and getting the soul and spirit of our leaders well-tuned for peace, harmony and love among all nations (who eat soup)!
